About the Chef

 I constantly read about food even after 16-18 hour days in the galley and when I’m on vacation, I'll try to get in a page or two before I fall asleep. It's a little counterintuitive but it helps keep my creativity burning for the next long day on charter. I might learn something new about the casein proteins in whole milk or how to get liquid nitrogen to become a solid in vac pack machine. In this way, I can apply what I’ve read to the next day or on the next menu.

 

Here are some of the things I like to do when I'm not making food. I absolutely love to travel long distances by motorcycle. I'm riding solo around the world as I type this.  My BMW is in Indonesia and it’s been ridden there from Fort Lauderdale, FL. Whenever there is a hoop around I love playing basketball. Padi has certified me as a Rescue Diver.

 

My passion and drive can keep a galley team on track and pushing forward. We will amaze the guests and the crew will brag about the quality of food to their friends on the dock.  I'm a great chef, but I can talk passionately about other things besides food and wine. I am an honest, hardworking person with integrity. My work ethic is beyond solid and I'm fun in the galley and in the crew mess.
